On our way to the Tough Mudder, one of our teammates pulled out one of the most delicious, healthy treats! Thanks to Tamara, we were introduced to these delicious “energy bites” This is a must try recipe. My kids have been enjoying them, and they are a much better option than most other “sweet” treats (little do they know how good for them too!)
Did I mention they are NO BAKE! Ready in just a few minutes, they can last for about a week, but you will be lucky if they last a day!
1 cup old fashion oats
3/4 cup Peanut Butter (feel free to sub any type of nut butter)
1/2 chocolate chips (again, you can sub anything you like here, cranberries, raisins etc)
1/2 cup of ground flax seed
1/3 cup of honey
1 tsp. of vanilla extract
Mix all ingredients in a bowl until well blended.
Chill in the fridge for about 1/2 hour
Roll into balls, about 1 inch.
Makes about 25 balls
These do not need to be refrigerated, but taste great chilled!
